1 cup quick oats
1/2 cup peanut butter or other nut butter
1/3 cup honey
1/2 cup ground/milled flax seeds
1/3 cup chopped nuts (I used mixed) or sunflower seeds
1/2 cup rice cereal or granola
1/2 cup chocolate chips, raisins, or other dried fruit
1 tsp vanilla extract
2 TBL brown sugar (optional for added sweetness)
1/4 tsp salt (optional)
1/4 tsp cinnamon or nutmeg (optional)
Mix all dry ingredients first in a large bowl first.
Add remaining wet ingredients and mix up well.
Refrigerate for 1 hour.
Roll/shape into tight balls.
Store in the fridge for up to 2 weeks in a sealed container or bag.
